Animal fats are good for you! This may sound silly. We have been told butter, lard, whole milk and fatty meats are bad for us. Instead of these items we should be eating soy, processed fats, vegetable oils and substitutes. Historically how can we make good sense out of these things? First of all, animal fat has to be qualified to be pasture based, or grass-fed. Ancient cultures did not have the capabilities to harvest tons and tons of grain without colossal efforts. Animals would have eaten grass. The grains would have been ground only immediately before they were eaten by humans. They would be stored in order to be preserved for as long as possible in their whole form. The grass fed animals would have been an essential portion of the diet. For a group of nomadic people, without the abundance of agriculture, fresh fruits and vegetables, the animals would provide food that would feed and nourish the body. When agriculture becomes more centralized and industrial, the corporations began to find innovations to use the grains of our massive farms for as many uses as possible. We began making corn into everything, and vegetable oils became a new item. Margarine came on as a butter substitute. As we look at the past we can see the transition to vegetable oils. Vegetable oils, using logic, could not be the foundation of our diets, grains could not be either, instead our ancestors would have been completely dependent on fat from animals to provide energy and protein from animals to build their bodies. The vitamins provided by grass-fed animal meat and fat are more easily taken into the body than the processed vegetable fats or even raw vegetables. The raw vegetables can be shown in chemistry to contain essential nutrients but those nutrients cannot be extracted by the human body in the same way a laboratory can pick them out. Animal fats, from grass-fed, pasture based animals are what deliver health. The state of many bodies today are a result of following the conventional wisdom provided to support particular industries. We can see the health deteriorate, the immune system react and the intolerances multiply as a result of the conventional diet. Processed sugar, grain, dairy, made to be shelf stable for as long as possible, robs us of essential trace minerals. We do not need these conventions.
