Another Recipe using fall flavors! Chewy Apple Oatmeal Cookies 1 Cup butter, softened 1 Cup Sucanat ½ Cup Honey Granules 2 Eggs 1 teaspoon vanilla extract 1 ¾ cup flour (spelt or soft white) 1 Tablespoon Cinnamon 1 teaspoon baking soda ¼ teaspoon salt 3 Cups rolled oats ½ cup dried apples In large bowl, cream butter, sucanat, and honey granules until light and fluffy. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples. Drop by rounded tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350 degrees for 10 – 12 minutes or until golden brown. Let stand for 1 minute before removing to wire racks. Yield: 4 dozen
