Another couple of great Christmas-y dishes! (Thanks, Robin Wertz McGowan!) Pear, Pomegranate and Spinach Salad Prep Time: 20 minutes Yield: About 6 servings 2/3 cup chopped walnuts or pecans, toasted 3/4 cup pomegranate arils 3 oz feta cheese, crumbled 1/2 cup dried cranberries 2 Bartlett pears (firm but ripe), cored, sliced and slices cut into halves 9 oz baby spinach Dressing 1/4 cup apple cider vinegar 3 Tbsp extra-virgin olive oil 1 1/2 Tbsp honey 1 tsp dijon mustard Salt and pepper, to taste Whisk all dressing ingredients in a bowl to blend well. Place all salad ingredients in a large salad bowl, drizzle with desired amount of dressing then toss to evenly coat. Serve immediately. Healthy Kale Salad Recipe with Pomegranates YIELD: SERVES 2-3 TOTAL TIME: 20 MIN 1 bunch of kale 1/2 cup pomegranate seeds 1/2 cup crumbled feta cheese 1 medium cucumber, diced salad dressing ingredients: 3 Tablespoons extra virgin olive oil Zest of 1 medium lemon 1 Tablespoon fresh lemon juice 1 Tablespoon balsamic vinegar 1/2 teaspoon brown sugar 1 teaspoon Dijon mustard 1/4 teaspoon kosher or sea salt fresh cracked black pepper to taste 1/4 teaspoon soy sauce or Tamari for Gluten Fee (optional instead of using the sea salt) In medium bowl, whisk together all the salad dressing ingredients. Alternate method: in a mason jar, add all the salad dressing ingredients together and shake well to combine the dressing. Wash kale and blot dry with towels to remove excess water. De-stem the kale leaves and chop the kale leaves into small bite sized pieces. In large bowl, combine the chopped kale, pomegranate seeds, feta cheese and cucumber. Add the salad dressing to the kale salad and toss everything together till all the dressing and salad ingredients are combined. Add additional salt and black pepper to taste. Serve immediately.
