Later in 1589 Sir Water Raleigh is credited for bringing the potato to Ireland, England and Scotland, and Wales. It became the staple food for Ireland where a peasant family often ate 10 pounds a day. It was quite nutritious when combined with buttermilk. However, do to the famous potato famine in 1845-1849 when the potato became diseased, Ireland lost over half there population( many migrated from Ireland because of this). The Russet Burbank potato, a hybrid potato developed in the US in 1872 later became poplar in both America and Ireland. Today (21st century) the potato has over 1000 varieties and is the four largest crop in the world following rice, wheat, and maize. China is the biggest potato producing country. Now for the IRISH HUMOR: Why did the LEPRECHAUN stand on the potato? To keep from falling in the stew! When is an IRISH POTATO not an Irish potato? When its a FRENCH FRY!
