Another way to use maple syrup. These are made in the tradition of popovers. You can use a muffin pan but they turn out much better with a popover pan. Grannys Maple Puddings Approx. 3/4 cups - 1 cup flour Generous pinch of salt 2 eggs 1 3/4 cups milk 1 jar of maple syrup Sour cream Break eggs into a bowl and beat well. Whisk in flour, salt and milk to make a very smooth batter of pouring consistency. Set aside for at least 15 minutes. While waiting take a metal muffin tray and pour a tiny amount of light vegetable oil into the base of each individual muffin cup. Use a scant teaspoon of oil each. Heat the oven to 400 degrees and put the muffin tray in to heat the oil. When the oil is hot ( do a drop of water test ) give the batter a quick stir and then fill each muffin cup with batter to almost full. Hurry the tray back into the oven for 35 - 45 minutes. Do not open the oven door for the first 30 minutes. Muffin trays vary in size and cooking time will vary. They are ready when theyre golden brown and risen. Serve hot with lots of maple syrup and sour cream.
