Antioxidants help prevent cancer in the body by mopping up harmful, cell-damaging molecules known as free radicals before they damage DNA and pave the way for tumours to develop. Free radicals occur naturally but their formation is accelerated be exposure to such things as sunlight and air pollution. You cant stop free radicals from forming, but artichokes as well as other fruits and vegetables can block their effects.
