Anybody have answers for this guy? Ive just been hired at a tiny diner with only two other employees. The owner hasnt made cleaning a priority but has granted me a $75 cleaning budget. There are years of grease on almost every surface in this place... And worst, there isnt a decent grease trap under the grill. Its just going into a baking dish. I cant get the health department to do anything. The landlord works at the dept and has been doing the inspections, ignoring everything wrong. Well, nothing I can do about that. Gist is, the place needs a lot of work. Im prepared to put dozens of hours into cleaning alone. Id appreciate some recommendations on 1) ways to remove a lot of hardened grease without damaging the walls (if possible) and 2) how to convince a bullish owner that he HAS to have a clean restaurant.
