Anyone here familiar with simcoe hops? I did a pale ale with mostly simcoe for finishing hops and it has the same slightly unusual flavor that my simcoe SMaSH had recently. Ive never had a beer I can say for certain was contaminated with diacetyl, but Im wondering if a mild case of it is what I have... Or if it is just the simcoe flavor profile. Its a subtle floweriness with the faintest hint of sweetness. Im not getting hardcore butteriness, but I find it unusual, though not totally unpleasant flavor wise. Its totally drinkable. It was fermented colder than I intended in the high 50s-low 60s... Didnt get a diacetyl rest. Yeast was slow to start and slow to finish as well... Sat in primary for 3.5 weeks in the low 60s Im thinking of rousing the settled yeast in the bottles and moving them into a warmer spot for a week or so.... See if it changes the flavor to something more familiar. I cant complain about the clarity though! Clearest us-05 beer Ive brewed.
