Anyone who knew my sister Pam would know that she was an amazing cook, much like our Grandmother Edith Fincham. The type of ladies who always had something wonderful to eat when youd stop in, even unexpectedly at their homes. You know what I mean, and usually everything they made was made from scratch. So I want to share this recipe with you that was given to me by my sis Pam. You will love her version of French Toast. Ingredients needed: Regular bread or non frozen Texas toast, 8 oz. cream cheese ( as always my favorite being Philadelphia Cream Cheese ), Approximately 1/4 cup sugar ( or less depending upon sweet tooth preference ), 1 can of pie filling ( any flavor such as strawberry, blueberry, apple, etc... they all work wonderfully ), eggs, milk, vanilla, ( ingredients for dipping bread as in regular French toast ), confectionery powdered sugar Preparations as follows: Whip together cream cheese, granulated sugar, and pie filling, creating a sandwich type spread. Prepare beaten eggs, milk, and vanilla together, in container large enough to accommodate dipping bread. Heat skillet over medium heat until hot. Spread one side each of two slices of bread with the pie filling spread. Then dip the other remaining two sides into the egg, milk mixture. Placing one slice egg side down into heated skillet, and the other slice egg side up over the first slice. Thus bringing together both sides that are spread with pie filling. When bottom half is golden brown, flip with a spatula and brown the other side. Once this is done place onto plate and sprinkle with confectionery sugar to taste. Enjoy. Note if apple pie filling is used I like to add cinnamon and nutmeg as well.
