Apple Cake Recipe:APPLE CAKE P YIELD: 12-16 SLICES When you slice this cake you find layers of apples oozing with cinnamon and sugar. Stir the batter by hand or do it in an electric mixer. This is really quick and easy. Prep Time: 20 minutes Baking Time: 60 minutes Ingredients 4 Granny Smith apples 2 cups + 5 tablespoons sugar 4 teaspoons cinnamon 3 cups flour 3 teaspoons baking powder 1 teaspoon salt ½ cup vegetable oil ¾ cup orange juice 1 tablespoon vanilla extract 4 eggs non-dairy baking spray with flour Equipment 12 inch Bundt pan Directions 1. Preheat oven to: 350 F. 2. Spray Bundt pan. Set aside. 3. Peel, core and slice apples thinly. Place them in a mixing bowl. Sprinkle apples with cinnamon and 5 tablespoons sugar. Mix well. Set aside. 4. Pour flour, remaining sugar, baking powder and salt in another mixing bowl. Mix with a wooden spoon. Make a well in the center. Pour in eggs, vanilla, oil and orange juice. Stir briskly with a wooden spoon until batter has formed. 5. Spoon 1/3 batter into the bottom of Bundt pan. Make a ring with half the apples (including syrup that has formed) on top of the batter. Add another 1/3 of the batter on top of the apples. Spoon remaining apples and syrup on top and cover with the rest of the batter. Bake one hour or until cake tester inserted comes out clean. Cool at least 20 minutes before unmolding.
