Are you planning to watch or read the Lion, the Witch, and the Wardrobe this Holiday season? Heres my MILs recipe for Turkish Delight to Wow them and enjoy with the story! Turkish Delight -- Dissolve 2 oz. of gelatin in 2 cups of water, add 2 lbs of organic sugar, bring to a boil over low heat. Boil for 20 min until mixture feels sticky and reads 240F on a candy thermometer. Remove from heat. Add 1 tsp. lemon extract, juice of one lemon, mix briefly. Traditional recipes call for 1 1/2 tbsp of rose water instead of the lemon juice and extract. Pour onto greased rectangular pan so that mixture is 1 inch thick. Allow to cool. When completely cold, cut into 1 inch squares and dust with icing sugar. Store in airtight container.
