Are you stuck in traffic, hungry and wondering what to cook for dinner tonight? What about Tamarind Ginger Chicken for a try. Add 4 inch peeled ginger in blender to paste, saute ginger in olive oil, add 2 cloves. Add chicken thigh meat about six to eight pieces, add 1/2 cup tamarind paste OR IF NOT available add 1/2 cup sweet dark soy sauce. Cook the chicken until there quarter cooked, then add baby carrots and green chilies, black pepper and salt if needed. So delicious, you got to try this recipe. Simple, healthy and satisfying!
