Arlene, this one is for you and Ron. Cauliflower Puree 1 head cauliflower 1-2 potatoes, cut into quarters 6 cloves of garlic, peeled 1 large onion, cut into chunks 1/2 block of diet creamed cheese 2 T. butter Salt & Pepper to taste Wash cauliflower and cut off the leaves and ribs from the bottom. Also cut out the hard core from the bottom. Cut head into florets about 2" in width. Peel and quarter the onion and the potato. Steam the vegetables until fork tender. Transfer soft vegetables to food processor and pulse, adding the creamed cheese, until it is as smooth as desired. Salt and pepper to taste. Serve as is, or place in a casserole dish greased with olive oil. Drizzle olive oil over top and bake for 15 minutes. Note: Add olive oil when processing and a couple of Tbs of curry powder to kick up the flavor.
