Arrival In Jaipur At The Army Commanders House. When we arrived at the Army Commanders House in Jaipur Nitu Sahni the Army Commanders wife had the most amazing spread for breakfast. A far cry from the boiled eggs and Amul butter on the train.Though I must say Amul butter has a special place in my heart reminding me of my childhood. Nitu had made Karela Ki Chaat for breakfast. I was trying to find the Karelas (bitter gaurd in the chaat) No I was explained that it was like Papri Chaat bur the Papries were shaped like Karelas. Papri Chaat and in this case Karela Chaat is actually street food in which round wafers are made out of of a dough of plain flour and a bit of semolina to give it crispness and deep fried.Then you layer it with boiled potatoes chickpeas and raw onions(only a few finely chopped) and smother it wirh sweet and sour chutney and a splash of yoghurt. Not to forget the red chilli powder and freshly ground roasted and ground cummin. The dessert was delicious home baked pastries.....a touch of the British Raj influence!
