As I promised before Thanksgiving, here is my Yeast Dinner Roll Recipe. #GlutenFree, #GlutenFreeYeastDinnerRolls, #GlutenFreeDinnerRolls Gluten-Free Yeast Dinner Rolls 2 3/4 cups Gluten-Free All Purpose Flour Blend (see recipe) 1 1/2 tsp. Xanthan Gum 3 pkgs. Quick Rise Yeast 1/4 cup Sugar 1 cup Hot Water 2 tbsp. melted Salted Butter 2 tbsp. melted Salted Butter (to be used later) 1 room temperature Egg 1 tsp. cider Vinegar In large mixing bowl, whisk together flour, xanthan gum, quick rise yeast, sugar and salt. Add water. Turn mixer on medium, and add melted butter, egg, and vinegar. Scrape sides as mixing. Mix thoroughly, about 2-3 minutes. Trace bottom of 9” round cake pan on parchment paper. Cut out circle. Spray pan with non-stick spray, put circle of parchment paper in the bottom of pan, and spray again. Using a 2” ice cream scoop, scoop out balls of dough, and drop them in the second batch of melted butter. Roll dough in butter, and with your hands gently roll the dough into rolls, and place in pan. Let rolls rise for 20-45 minutes so that rolls double in size. If rolls look dry (or if you would like to just for flavor), brush tops with butter again. Preheat oven to 400 degrees. 7) Cook 25-30 minutes, until tops are golden brown. Top with more butter once out of the oven.
