As I was just explaining to someone...let me clear up a little bit on non-Celiac gluten intolerance. The studies that prove gluten intolerance is not a thing? Theyre flawed, but theyre not entirely wrong. Its not specifically the gluten we are reacting to, its something called FODMAPs. Fermentable, Oligo-, Di-, Mono-saccharides And Polyols. They are carbohydrate chains that are commonly attached to wheat gluten, which are poorly absorbed by the body. However good luck explaining that in casual conversation. Its like saying to someone The bullet didnt actually kill that guy, it was actually the hydrostatic shock ripping through their internal organs paired with the resultant blood loss from the gaping hole. Technically true, but its easier to just say Yep, it was the bullet.
