As it became our Monday tradition we are brewing for you today perfect cup of Xihu Longjing or Dragon Well tea. It is the member of Chinese Green Tea family. The tea aroma filled the room of our Tea lounge and we wish we could have shared this wonderful tea liqueur with you. Longjing is world famous for its four wonders - emerald green color, aromatic flavor, sweet taste and beautiful appearance. Dragon well tea has different grades according to the place where the tea trees grow and a lot of different variables. Mr. Dao offers to its guest the premium class of Longjing brought from Xihu province. After the fresh leaves have been picked, the makers should first grade them, as different qualities of leaves need to be dealt with different temperature and techniques. The masters will bake the tea by hand using specially made iron pans. Traditional method of making Dragon Well Tea has many ways - grasp, toss, shake, pile, throw, buckle, press, and grind. Experienced masters know well how and when to use the certain movements according to the temperature, color and moisture content of the leaves. Please do not forget about good quality water with an appropriate for green teas temperature of 75-80 degree. They say that Longjing is the perfect match with yixing pottery, but we are brewing it today in a glass teapot to observe and enjoy how theleaves extend their waists gently and slowly.
