As most folks are aware, we are a subsistence farm and raise our own livestock for our own consumption. We have two Dexter steers that we will be processing for meat in 18 months time (July/August 2016) and we are offering them up for sale. Dexters are a miniature breed of cattle that originated in Ireland. For more information on Dexters, please have a look at the link below. While small and appearing to be cute, Dexters are cattle through and through, with all of the same behaviours as are exhibited by full size cattle, and our Dexters are not considered pets despite their small frame. If you were to watch Albert and I (Robyn) trying to administer dewormer or anything else to the herd, youd be in for quite a show! These steers will have been raised exclusively on their mothers milk and native grazing in the area, and will have never known a harsh hand in their lives. They were born here at Farm Girls and have only ever been treated with kindness and respect. They are currently 7 months old, and will be just over 24 months at processing time. In terms of medication, they will only have had what they needed to stay healthy, being dewormer (f required), and muti for ticks and flies, of which they will be clear for 60 days before slaughter (normal withdrawal time on the products we use is 28 days, so they will be 100% chemical-free). For your money you will get approximately 150kg (full weight) or 75kg (half weight) of bone-in cuts, cut to your specifications by our friends at Bosheuvel Deli who will perform the lights out and processing with me as an observer. You could also order boerewors, sausages, mince - anything you like according to a beef chart and NO nitrates, MSG or preservatives added. All cuts will be vacuum packed or placed in trays, and clearly labelled. There is something incredibly special about Dexter meat - it is never available via supermarkets and is considered to be some of the best beef in the world. Characteristics are a tender, juicy, flavourful, lean meat, with wonderful colour. The cuts are small - half the size of regular cuts from large breeds and perfect for the small family. It is suitable for frying, grilling, roasting - you name it. The meat will be dry-aged for being 4 and 14 days before processing. You can expect to pay an all-in cost of approximately R70/kg all-in at this stage - price subject to confirmation closer to the time but we have been generous in the calculation indicated. We require a deposit of 50% of either the full or half side to be paid to us on confirmation of your order. In the event that the order cannot be fulfilled leading up to the time, your deposit will be refunded. Bosheuvel is a licensed butcher and conforms to all rules and regulations in terms of meat handling and health. The costs for processing (included in the calculation above) will be paid by you to Bosheuvel directly. This is your chance to experience real meat straight from our farm, safe in the knowledge that you are buying what the marketing says you are. Healthy, grass fed beef from a small farmer you personally know and trust.
