An individual who possess a strong work ethic, attention to detail, a good communicator and a leader who will be able to manage a small team over service periods. A fundamental understanding of how to look after people in the area of food, wine and beverage is most important. You would ideally have spent a few years as a capable waiter who understands the demands of service, training staff, operating a POS, assisting with implementing systems and procedures, and has a sound understanding of food and wine.
