Assorted vegetable sauté Extra virgin olive oil 1tbsp Zucchini (tori) 1 medium Peeled and chopped Eggplant 1/2 Cut in small pieces Onion sliced. 1/2 Garlic chopped. 1/2 tsp Green bell pepper. 1/2 Diced Tomato diced. 1 Salt and pepper to taste Kalonji. A pinch Worcestershire sauce 1/4 tsp Soya sauce. 1/4 tsp Method: Heat oil in pan and saute onions until it changes color Add garlic and toss a bit Add all veggies, salt pepper and sauces and sprinkle kalonji ... Keep on stirring until soft Use low heat and cover for a few minutes if necessary The whole thing should be ready in ten minutes max Serves one Since my hubby is going through one of his phases where this time its low fat healthy veggies so as to lower cholesterol so this is what we are having for lunch :p I serve this with roti can be served with anything you like.. And you can also add or subtract any veggies of your choice!!
