At the Cheese Case: MeadowKaas Rouveen is a village in northern Holland, filled with traditional dairy farms and cheese makers. One such cheese maker is Henk Courtz, a forth generation cheese maker, and cheese maker of MeadowKaas. For generations he and his family have been celebrating the coming of Spring with a cheese that is only available for 3 months of the year. Translated to English, MeadowKaas means Meadow Cheese, which represents the first grazing of the new Spring grasses. Over the Winter, the grasses have grown rich in nutrients and flavor, and the Dutch Freisan-Holstein cows then produce copious amounts of milk with a high cream content, (over 50%)!).
