Audrey asked about a breakage of a jar in a perfect circle during processing. I wanted to let you know what I told her: Audrey that is how they always break but usually that happens because of one of four reasons: (Please add any additional ways you have seen it happen) 1. There are occasionally defective jars in the new box 2. If you use a metal knife to remove the bubbles in your jars you can scratch the glass and over time it will crack. 3. The jar cooled during filling and the change in temperature when adding it to the water bath caused the breakage. 4. (Not usual) There was no rack on the bottom of the pot and the heat directly on the jar caused the breakage.
