Aunt Erma’s 1-2-3-4- Cake- Now Aunt Erma could cook about anything and do it well. Of course the kitchen might look like a tornado had hit it. She would clean it up in a whirl too. Sometimes it might not look too pretty but it was the final product that was good and tasty. One of the glorious things she made was a simple little Southern recipe that all of Big Mama’s girls could make from memory. It was always good with strawberries, peaches and what have you. It was good with ice cream and just by itself. It could be made thin and spread out on a cookie sheet and then it is cut into squares as a tea-cake. AS time went on she called it as Easy as 1-2-3- cake or plain cake or just 1-2-3-4 sweet bread. You try this when you want a quick dessert to go with anything. You will like it. Many old established Southern families had this recipe and it works well when no box cake mix can be found. If one knows a simple icing formula you can change it into really something special. A warm slice with a bit of chocolate syrup and as Ole Ernie used to say, “its pea-pickin’ good.” 1 c. butter or oleo 2 c. sugar 3 c. flour self rising (if using plain flour use 3 tsp. baking powder) 4 eggs 2 tsp. vanilla 1 c. milk Cream butter and sugar. Add the eggs. Add flour and all other ingredients. Mix bake in a 9 by 13 or a couple of round pans at 350 degrees until brown. It can be used for upside down cake base and shortcakes as well.
