Auntie Lorna & April, this is the recipe I mentioned yesterday. Since Im far too busy/lazy to make enchilada sauce Ive subbed in salsa before and a jar of something from the Mexican part of the ethnic foods aisle that I cant remember but was super spicy haha. So far its always turned out delicious. I also add in black beans and more corn than it calls for but as with all soups- just based on personal preference! Great served with lime, avocado, cilantro & sour cream :)
