Aww, look! How cute. Breaking in the new bachelor-sized Crock Pot by reprising a much more manageably-sized batch of pho (essentially making three servings instead of eight... oofdah). Modified slightly to add green onions at the time of serving, though these do not replace the charred sweet onions which cook overnight with the beef shank. Also, for fun (inside joke; Asians will get it), I opted to use pad thai noodles as they are a thicker, flatter kind of rice noodle. I also experimented by leaving out the oxtail, which results in a less fatty soup at a moderate expense in broth flavor. Nonetheless, it turned out good enough that I really did not need hoisin or Sriracha... though I tried some anyway: if they are of a high quality, and used in extreme moderation (maybe an eyedropper is appropriate?), both enhance the flavor substantially without overwhelming.
