BACON JAM! 1 1/2 pounds chopped bacon 3 cloves garlic 2 medium onions chopped 1/4 cup REAL maple syrup 1/2 cup brown sugar 1/2 cup cider vinegar 3/4 cup brewed coffee Brown bacon. Drain all the grease possible, add onion and garlic & saute till translucent. Remove from heat add the other ingredients. Mix well. Transfer to crock pot and cook 4 hours on low until thickened. Transfer to sterilized jars. Pressure can at 10 pounds for 75 minutes. Dont water bath the bacon.... makes approximately 3 cups. Oh it also says to pulse it in a food processor a bit if its too coarse..before you put it in the crock. ...either you like it or you dont, there is no in-between (from what I have seen). NOTE:Do not lift the lid off of the slow cooker (for a sniff) until its cooked more than 2 hours, it smells NASTY....but something happens the last 1/4 cooking time and the smell is divine.
