BAKEWELL TART Serves 4-6 Prep: 20 mins Cooking: 35 mins 300-400g Dietary Specials gluten-free pastry Seedless raspberry jam 3 eggs 50g caster sugar 125g Pure sunflower spread, melted 1 tsp vanilla extract 75g ground almonds Heat the oven to 200C/180C fan assisted/gas 6. Roll out pastry on a lightly (rice) floured worksurface, enough to line a flan dish. Chill. Spread the jam evenly over the base of the pastry. Whisk the eggs and sugar together until they become fluffy and lighter in colour. Whisk in the butter and vanilla extract and then fold in the almonds. Pour the mixture into the pastry case and bake for 10 minutes. Turn down the oven temp to 180C/160C fan assisted/gas 4 and cook for a further 20-25 minutes until golden and the filing is just set. Serve with soya ice cream, soya cream or dairy free custard.
