BBQ Tip Wednesdays: Thanks to The Kansas City Barbeque Society • A marinade usually tenderizes approximately one-fourth inch beneath the surface of the meat. • Steaks should be cut one and one-half inches thick for grilling. Lean cuts may be wrapped in bacon to improve flavor and retain moistness. • If serving leftover marinade as an accompaniment, be sure to boil marinade before serving to kill any food-borne microorganisms. • If using charcoal to grill, it will take thirty to forty-five minutes before the coals are ready. Do not start grilling before the coals are covered with a light ash. The coals should not be flaming. • When using barbeque sauce that does not contain sugar, apply the sauce every forty-five to sixty minutes. This prevents the meat from drying out during grilling or smoking. Barbeque sauce that contains sugar should be applied only during the last stages of grilling or smoking.
