BEEF POT PIE WITH ROSEMARY, THYME, AND CRACKED BLACK PEPPER TOPPED CRUST Some good comfort food for a cold Winter night! Ingredients: Pastry ingredients: 2 pie crusts, fresh or frozen, for a deep dish 9 inch pie milk Seasonings for top pie crust: 1/4 teaspoon each of dried thyme, rosemary, fresh cracked black pepper Filling ingredients: 1 1/2 pounds thick cut round steaks, cut into 1 1/2 inch cubes, fat trimmed off 1 can (10 ounces) beef broth 1 teaspoon Worcestershire sauce 1/2 teaspoon garlic powder 1/2 teaspoon pepper 1/2 teaspoon seasoned salt (Lawrys or other) 1 large onion, coarsely chopped 2 Tablespoons butter 1/4 teaspoon dried thyme, crushed with fingers 3 to 4 medium red potatoes, not small ones 1 Cup sliced fresh baby carrots, measure after slicing 1 can (7 ounces) corn kernels, drained 1 can (14 ounces) cut green beans, drained 1 can (4 ounces) sliced mushrooms, drained (optional) 2 Cups (or a bit more) beef gravy (your choice of homemade, or gravy from a can or jar) 1/4 teaspoon garlic powder salt and pepper, to taste Directions: Place first 9 ingredients into a large dutch oven or pot that has been coated with non stick cooking spray. Cover pot and cook on medium-low heat, stirring occasionally, for 45 minutes, or until meat is tender and onion is cooked. While meat is cooking, cut up potatoes and carrots and boil until tender, about 10 minutes. Drain and set aside. Place potatoes, carrots and the rest of vegetables into a large bowl. Gradually add gravy, just enough to coat the vegetables. (You dont want too much gravy, as it will make the crust soggy.) Drain meat and onion, and add to gravy and vegetable mixture. Add 1/4 teaspoon garlic powder and season with salt and pepper to taste. Add a little more gravy to coat the meat. Combine well. Fill prepared pie crust with filling, then place second crust on top, sealing edges well. Cut slits to allow steam to vent. If desired, you can also do a lattice pie crust top (as pictured). In a bowl mix together seasoning ingredients for pie crust topping. Set aside. Brush top crust and edges with milk, then lightly sprinkle with dried thyme and rosemary, and fresh cracked black pepper mixture. Bake in 400 degree oven for 35 to 40 minutes. Allow it to cool 20 to 30 minutes before slicing.
