BOLOGNESE BITES I really like to use pork mince instead of beef in bolognese , it gives it a much more delicate flavour to let the other ingredients shine. But you can use whatever you want or maybe try 1/2 and 1/2 . Or your own recipe Bolognese sauce 500 g pork mince Olive oil 1 small onion chopped 3 cloves garlic crushed Salt and pepper to season 1 tablespoon tomato paste 1 tin of peeled tomatoes 6 fresh basil leaves ( or teas of dried) 1/4 cup fresh parsley(or tables of 1 beef stock cube 1/4 cup red wine Water 1/2 cup parmessan cheese 12 slices bread. Crusts Lightly oil or butter muffin pans Cut crusts from bread and press in pans and set aside Heat oil in deep frying pan and saute onions and garlic till soft. Add tomato paste and cook for a few minutes Add mince and cook till nice and brown. Add wine, tomatoes and chopped herbs and salt and pepper to taste then crumble the stock cube and add 1/4 -1/2 cup water Stir well . Turn down the heat and let it gently simmer for 5 mins or until sauce has reduced a little When cooked take of the heat and leave to cool slighty Fill the bread cases with the meat mixture and cook on at 200 deg for 15 minutes or until bread has browned and meat is hot . Before serving sprinkle with parmessan cheese and parsley Serve with green salad or is yummy with chips and veges Also to add a little more indulgence to this dish pop a piece of mozzarella in the middle of the meat for that mouth full of yum . watch this space for more fillings for this quick little meal
