BROCCOLI CHEESE SOUP 1 pound chopped broccoli 2 cans chicken broth 1 cup heavy cream 1/4 cup minced onion 1/4 cup minced celery 1/4 cup minced carrot 1 tablespoon minced garlic salt pepper shredded cheddar cheese in a large pot over medium heat place chopped broccoli and cover with water and bring to a boil add onions,celery,carrots and garlic continue cooking until broccoli is tender remove 1/2 the water add chicken broth and cream reduce heat to low bring to a simmer I did not give a measurement for the cheese that will depend on how you like your soup add shredded cheddar cheese 1 cup at a time stirring constantly until completely melted salt and pepper to taste
