BY REQUEST: Crunch Caramel Apple Pie 1 Pastry for Single-Crust Pie ½ c. Sugar 3 T. All Purpose Flour 1 tsp. ground Cinnamon 1/8 tsp. Salt 6 c. thinly sliced, peeled cooking Apples ½ chopped Pecans ¼ c. Caramel Ice Cream Topping Crumb Topping: In medium bowl stir together 1 c. packed Brown Sugar ½ c. All-Purpose Flour ½ c. Quick Cooking Rolled Oats Using pastry blender, cut in ½ cup of Butter until mixture resembles coarse crumbs. Preheat oven to 375-degrees. On a lightly floured surface, roll out pastry to a 12-inch circle. Ease pastry into a 9-inch pie plate, being careful not to stretch pastry. Trim; crimp edge as desired. In a large bowl stir together sugar, flour, cinnamon, and salt. Add apple slices and gently toss until coated. Transfer apple mixture to pastry-lined pie plate. Sprinkle Crumb Topping over apple mixture. To prevent overbrowning, cover edge of pie with foil. Bake for 25 minutes. Remove foil. Bake for 25-30 minutes or until top is golden. Remove from oven; sprinkle with pecans. Cool on wire rack. Drizzle with caramel topping before serving.
