Back in the mid 70s, a local couple named Elden and Barbara Staley opened a Taco Time in Rock Springs. At the time, it was in the Plaza Mall. Elden, a long-time Mountain Fuel employee, left his job to pursue this new adventure. People thought he was nuts. After all, hed been at Mountain Fuel for over 20 years... and now he was leaving a secure, steady income to do what? Open a taco joint. I remember that Taco Time. It was my favorite place to eat. Their soft shell tacos were like nothing Id ever eaten. Summers spent with my dad in Rock Springs were spent begging to go to Taco Time. Elden and Barbara eventually expanded their Taco Time business... and got the family involved. To date, the stores are still owned and managed by the Staley family -- most notably, their son, Leland, and his lovely wife, Denise. Face it... any of us living in this county have eaten at Taco Time. A lot. Who doesnt love to place an order for a crisp bean burrito and hear, Waldo! yelled to the kitchen? Better yet, the Staley Taco Time stores are always well kept, nicely decorated, and the food and service are consistently excellent. Sadly, a few days ago, Barbara Staley passed away. Although she and Elden had retired and were living elsewhere, it was always nice to see their smiling faces appear at one of the TT stores on occasion. They were a dynamo couple, incredibly nice, and always well thought of. So, any of you who love the Taco Times of Sweetwater County -- owned and maintained by the same family for the past nearly 40 years -- take a moment to remember Barbara. Go have a taco in her honor. We did. Two nights in a row now. And again until shes laid to rest later this week.
