Bagel ingredients 1 1/4 cup warm water 1 1/2 tablespoon sugar +2 tablespoon 1 tablespoon active dry yeast 3 1/2 cups bread flour 1 1/2 teaspoons salt 2 tablespoons sesame seeds (Black and white mix) 2 teaspoons poppy seeds (Posta/ khas khas)) White Oil – to greeze 1 egg white, to glaze (Optional) preparation method *In a bowl, combine ¼ cup the warm water and sugar. Pour in the yeast Leave for 10 mins until the mixture becomes frothy. *In a larger bowl, whisk together the flour and 1 1/2 teaspoon salt. Once the yeast mixture has had time to activate, pour it in to the flour mixture and stir until a crumbly dough forms. *Turn out onto a floured surface and add rest 1 cup warm water , knead for 6-7 minutes. Put the dough in a lightly oiled bowl and cover with a piece of oiled cling film. Place in a warm area and leave until doubled in size, about 1 hr, then uncover. *Divide into eight equal pieces. Shape into a ball and press your finger through to form the center hole. *Once you have shaped all the bagels, allow them to rest for 10 - 20minutes ,cover lightly with cling film. *Now take your bagels and put them into a pot of boiling water, add 2 tablespoon of sugar. They should float. Let them cook for 45 seconds to 1 minute on each side, Now keep them on prepared baking sheet. *Whisk the egg plus 1 teaspoon water in a small bowl to make egg wash and brush this over each bagel. Or just only Sprinkle all the seeds! After you add the seeds bake at 180°C for 20-25minutes.. serve them with fresh cream cheese.
