Red Velvet Cupcakes with White Chocolate Frosting Ingredients for Cupcakes: 2 1/2 cups flour 1/2 cup unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup (2 sticks) butter, softened 2 cups granulated sugar 4 eggs 1 cup sour cream 1/2 cup milk 1 bottle (1 ounce) McCormick Red Food Color 2 teaspoons McCormick Pure Vanilla Extract Procedure in baking cupcake : Preheat oven to 350°F. Mix and sieve, flour, cocoa powder, baking soda and salt in medium bowl. Set aside. Beat butter and granulated sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, one at a time. Mixi in sour cream, milk, food color and vanilla. Gradually beat in flour mixture on low speed until just blended. Do not overbeat. Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full. Bake 20 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely. Notes: I normally turn around the cupcakes after 70% of baking time in this case around 15 mins. It helps in even baking of the cakes Baking cupcake Through Microwave: Micowave on high for 3 minutes and let the cake rest in the closed MW for a minute or two. If making cupcakes, microwave for 1.5 minutes and rest for 30 sec. Take out the bowl and insert a toothpick to check if it is fully cooked. Return to the MW for 30 seconds if it is undercooked Let cool completele before demoulding. Baking cupcake through Pot: Pot baking method: Step 1: Place the pot on the burner ( Stove, Gas or electric cooker) and reduce to medium heat. Step 2: Turn the aluminum plate upside down and place in the pot if you are making large “whole” cakes. If you want to make cupcakes , you would have to substitute the Aluminum plate for a clean baking pan to get a larger surface area. Step 3: Line your cake pans or cupcake molders with Baking Sheets. If you dont have baking sheets, you can simply grease the cup cake pans with little margarine and dust with flour. This would make the cakes come out eansily once done. Scoop your batter into the cupcake pans. Step 4: Place the cupcakes on top of the overturned baking pan and cover the pot Step 5: While baking, DON’T open the pot as this would make the cakes collapse. Only open when the baking time elapses. Bake for about 22-35 minutes (One sure way to know if the cake is ready is when the aroma starts filtering out). Leave to cool in the tins before turning out. Baking through Turbo broiler with convection oven: The trick is to use individual muffin tins instead of a muffin tray. For brownies, try using a smaller pan that will fit in the turbo broiler. Did you know your favorite cupcake recipe will work with a turbo broiler? Its just a little trickier to get the tins in and out, but it works! To preheat, set the temperature knob to your desired temperature. Crank the timer. Then push down the handle to start preheating.After youve prepared your cupcakes or muffins, open the turbo broiler and let someone hold the cover while you carefully lower the rack inside. Bake according to your recipe. When done, ask someone to hold the cover again while you gently lift up the wire rack out of the broiler. Or After making the batter for cupcakes, I pre-heated the turbo broiler to 150 degrees Celsius for 5 minutes. When its done, I placed my cupcakes inside and set the temperature again to 150 degrees Celsius. I let the turbo do the baking for 15 minutes. Actually, I tested it first for 10 minutes but when I used the toothpick test, there were still bits of batter which are uncooked. I reheat the cupcakes for another 5 minutes and thats when I got moist, fluffy and tasty cupcakes. *********************** Ingredients for White Chocolate Frosting: 225gm Cream Cheese 225gm White Chocolate 1 Cup Butter 2 Cup Icing Sugar Procedure in Making White Chocolate Frosting : In a bowl microwave half of the white chocolate for 1 minute.Add in remaining white chocolate and mix well. Microwave for 15 secondsStir the chocolate well till it is smooth and completely melted. Keep asideIn another bowl beat the cream cheese till soft and smooth.Add in the melted chocolate and beat again till smooth. Add in butter and beat again.Add in icing sugar and beat till soft, smooth and fluffy. Notes: When adding the chocolate, it should have cooled off, if not wait till it . Frost the cupcakes. To do this, use either a spatula,piping bag or a Ziploc bag to pipe on frosting. Decorate according to the occasion or however you like!
