Banana Caramel Tart with Mascarpone Cream!!! This is one of my sisters favourite deserts. If we ever went out and had desert this was sure to catch her eye and temp her taste buds. I always recall how tho each time she ordered it she could never finish it all. So I thought why not petite size ones. Let me say I think its a hit and just the right size without the sickly feeling, you could go for a second. For the tart cases: 115 grams unsalted butter, softened 1/2 cup caster sugar 1 egg 1 1/2 cup plain flour 1/4 teaspoon baking powder Pinch salt Place butter and sugar in a stand mixer till light and fluffy. Add the egg till combined. Then add your flour, baking powder and salt till smooth. Once it forms into a dough, take out and wrap the dough in glad wrap. Refrigerate for 30 minutes. Pre heat your oven and grease your tart trays. Take your dough out of glad wrap. Dived your dough into quarters, and then dived again into ball sizes. Press each into your moulds till you feel its even all around and smooth. Use your fingers or flat edge knife to smooth. Bake in oven till lightly golden. Varies on ovens. Mine took about 10-15 minutes on 160 degrees. Allow to completely cool and refrigerate. I made mine the day before. Caramel: I made mine the night before and used the cheats way by boiling 1 can condensed milk in boiling water for 3 hours. Allowed to cool completely before opening. Place in an air tight container till use. I placed mine in a piping bag to fill my tart cases. Mascarpone topping: 1/2 cup mascarpone 1 cup fresh cream 1/4 cup icing sugar 1 teaspoon vanilla Essence Place all ingredients into a stand mixer and beat till you get to a piping consistency. I used 1 large banana to make 12 tarts. Slice very thinly. When ready to use, place two slices of banana at bottom of cases. Using a piping bag put your caramel in and pipe even amounts covering your banana. Then using a clean piping bag. Place your cream in and pipe over the top of your caramel. You can dust cocoa powder over the top or leave plain. These are just Devine and will be a huge hit at any function or just as a treat for your friends and family. I have used a different recipe on my next batch for the pastry. To find which is the best. Will keep you updated on this. Enjoy!!
