Barbora from Slovakia shared this recipe with her HOST family: Apricot Balls You will need: 4 cups milk 1 cup semolina flour 2 ½ cups flour 1 egg 2 - 16 oz cans of apricots, drained 1 cup melted butter (to serve with meal) 1 Tbsp. melted butter (for prep) 1 ½ cups powdered sugar 1 ½ cups finely ground bread crumbs 1 cup finely ground poppy seeds Step 1: Bring milk to a boil in a medium sized pot. Add semolina flour to boiling milk. Stir until it gets thick, a dough like consistency. Add egg. Mix well. Remove it from pot to a lightly floured counter top. Let cool. Step 2: Once dough has cooled, start adding flour and kneading until it is a pastry consistency. Roll dough flat, about ½ an inch thick and cut into 4x4 inch squares. Add apricot to center of square and form a ball. Step 3: Boil a large pot of water. Add balls to boiling water. Once balls float to the top, they are done. Remove them from pot and serve with option of bread crumbs or poppy seed (see recipe below). Bread crumbs: Grind dry bread crumbs to a fine consistency. Toa st bread crumbs with 1 tbsp. butter and 3 tbsp. powdered sugar. Lightly sprinkle on apricot balls, add warm butter over the top and enjoy! Poppy seeds: Grind 1 C. poppy seeds in food processor, add 1 C. powdered sugar. Stir together. Sprinkle on Apricot balls and add melted butter over the top and serve.
