Beacause you asked for it, of course Im sharing it! Resharing my decorated sponge cake roll. Recipe here. Ingredients: 1 cup cake flour 4 eggyolks *7 egg whites 3/4 cup sugar 1/8 tsp salt vanilla 2 tbsp milk * I use egg whites in carton for the additional 3 egg whites (1/4 c egg white is about 2 eggs so I use 1/4 + 1/8 cup liquid egg whites) How To: 1. Put oven rack in middle position. Preheat oven to 350. 2. Prepare pan - I use 9x13 grease pan then put parchment paper on top. 3. Sift flour and salt, set aside 4. In a large bowl, cream eggyolks and 1/2 cup of the sugar until it is very creamy and the sugar has dissolved. 5. Add milk and vanilla and mix completely. 6. Add the sifted flour. Batter would be thick. 7. In another bowl whip egg whites until foamy, add the remaining 1/4 cip of suagar. 8. Whip until stiff and shiny but not dry. At this point, you want to separate some batter + some meringue. Depending on the number of colors you are planning to do, you could separate the correct amount you need. For every tablespoon of batter add 3x the meringue mixture. Example: 1 tbsp batter (+add the color you want) + 3 tbsp meringue= fold and put in a small piping bag/ parchment cone. *I used a sandwich bag for this. Cut the tip. This will be used for the pattern. For this cake, I have 3 colors, so I did 3 separate mixtures. Start drawing your pattern. Always start with the color of batter that you want o be seen on top once the cake is baked. Cure/set drawing in the oven for 30 secs - 1 minute in between pattern. *If you just have one color pattern, you just have to do this one time. * This is the Japanese method* Another way is, you could also freeze the colored pattern in between colors. Once you have finished your work of art, :) continue below... 9. Fold in the meringue with the eggyolk mixture. 10.Pour in the pan over your design and gently even it out with a spatula. 11.Bake for 10-12 min. It wont brown so just watch out. If it feels like springing back when yu touch it, its done. Suggested Filling: 250 ml whipping cream Vanilla powdered sugar to taste Fruit of your choice (may be canned or fresh)
