Beans, continued…When I was a kid, I hated green beans. The only green beans we ever ate were out of a can. My Dad’s preferred cooking method was to open up two cans, cut up a couple of pieces of bacon and put in the pot with them, bring to a hard boil and continue cooking for about 45 minutes. Needless to say, they were tasteless, nutrition-free, and just the way the family served beans. Not until I planted my own seed and harvested my own beans did I ever discover how wonderful they are. I always thought a bean was a bean, and so pleased to discover otherwise. There are subtle differences between some varieties, aside from shapes and sizes, flavors also vary. The French Haricot Vert is long, elegant and lean when harvested at its peak, and has a certain sweet taste to it. We also grow a petite filet bean which is referred to as a tiny, thin, fancy pod. Then there is the all American Provider bean, which is meaty stringless. And last, but not least, we also grow an Italian flat podded bean that has a buttery flavor to it. Looks like a productive bean harvest. We will bring lots to the farmers market for the next few Saturdays. If you want extra to can or freeze, just let us know ahead of time!
