Beat the heat with this simple and easy to make recipe using produce in season! Combine cucumbers, tomatoes, and red onions with your choice of other fresh produce from our farmers markets! Toss together 2 large cucumbers, 2/3 cup red onions, and 3 large tomatoes after you have sliced and chopped them to the appropriate size in a large bowl. Add 1/3 cup red wine vinegar, 1 tablespoon of white sugar, and 1 teaspoon of salt, then add 3 tablespoons of olive oil and 1/2 a cup of chopped fresh mint leaves for that refreshing salad!
