Because my daughter Annabelle and new hubby Russ need a gluten free diet, I tried a gluten free flat bread recipe last night and they turned out quite good. Rice Flour, brown rice flour, potato starch...they are so different to work with than regular flour. The consistency was a bit thicker than pancake batter and then I had to knead more flours into it and it still ended up thin and fragile like pie crust, as I rolled out the flatbreads and transferred them to a pan on the stove top. The dough does not taste good before cooking... like baking powder. They turned out beautiful though, taste great and will be great for flat bread sandwiches. Yay!! Next experiment; Gluten Free Brownies!
