Because of the freeze coming on, I brought in all the produce from my garden today. The stuff from my garden inspired me to learn this easy French recipe. Ratatouille :) 2 Tablespoons olive oil 1 bay leaf 3 cloves garlic, peeled 1 onion, sliced thin 1 eggplant, chopped in 3/4 pieces 2 small zucchini, split and sliced Peppers, sliced or cut to 3/4 pieces 1 cup chopped tomatoes (canned are good, too) Heat the oil in your largest skillet and saute the bay leaf, garlic and onion for 5 minutes. Add the eggplant and cook 5 minutes. Add the zucchini and cook 5 minutes. Add the peppers and cook 5 minutes. Add the tomatoes and cook until its all tender. Season it with salt, pepper and fresh oregano (basil or thyme) Its easy to experiment with. And when you add ground beef or lamb, chicken or shrimp, its a meal. Tonight, Im going with meatballs.
