Because of the way they carry on about recipes, Americas Test Kitchen might be called the PBS Nerd Food Channel. Here are a *few* of their cookbooks that I own. In the ones with the white covers, they expound about every recipe: what it is, how they chose the ingredients, how many versions they created to come to their final dish. I *love* these books. If you want simplicity, get the ring-bound books, like the green one=just the recipes. I particularly like the Light & Healthy books—really good food & good for you.
