Beef Broth Vietnamese Pho - For the broth I use : 2 cartons low sodium beef broth 1 large white onion (separated into chunks) 1 cinnamon stick 1 chunk (about 3in) peeled ginger 2 large garlic cloves 2 tsp anise seeds or 1 star anise whole 1/2 tsp crushed red pepper flakes Thai brown rice noodles (cooked) (when packing for a trip I allow them to dry completely before putting them in a plastic bag) Ingredients to taste: Cilantro Line Mint leaves Sweet chili sauce Chili Paste Meat of choice ( I use shrimp because its easy and doesnt take long to cook.) Put the broth ingredients in a large crock pot all together and turn on low heat: simmer for 4-8 hours. Strain the broth out and set it aside. You can now throw out the ingredients left from the strainer. Boil the brown rice noodles Pour the broth over the noodles Add cooked shrimp (or nest of choice) In your own bowl add the following : chili paste and sauce to taste (a little goes a long way, so add it in small increments) Lime, mint leaves and cilantro to taste 1 I keep all of the ingredients separate and mix them together in one serving increments when Im ready to eat.
