Beef Empanadas, Rice & Beans: its whats for dinner♡ Make the filling first so that itll have time to cool down by the time you make the dough. Ingredients for the filling: 2 tablespoons olive oil 1 large onion, chopped 1 red bell pepper, chopped 1 lb. ground beef 2 hard-boiled eggs, chopped Chopped green olives, to taste Salt and ground black pepper to taste Beaten egg, for brushing Directions: 1. Heat the oil in a skillet, and sauté the onion and bell pepper until tender. 2. Add the ground beef and stir. Season with salt and pepper, and cook over medium heat until the beef is browned. Add the eggs and olives. Thoroughly mix together all the ingredients, and chill the mixture. 3. Once the filling is cold, place a heaping tablespoon of the ground beef mixture in each empanada disc. Lightly dampen the edges of the dough with water, and firmly seal the empanadas shut by crimping the edge with a fork. 4. Place the empanadas on a greased baking sheet, and brush the tops with beaten egg. Bake in an oven preheated to 375ºF for about 15 minutes, or until golden brown. Ingredients for the dough: 3 cups all-purpose flour ¼ teaspoon salt 6 oz unsalted butter (1 ½ sticks), chilled and cut into 12 pieces 1 egg 4-5 tbs water Making homemade empanada dough: Mix the flour and salt in a food processor. Add the butter, egg and water until a clumpy dough forms. To make the empanada dough by hand, follow the same instruction but use your hands to mix the ingredients together. To make it easier to incorporate the butter you can freeze it and then grate it into the flour mix. Form a ball, flatten slightly, and chill in the refrigerator for about 30 minutes. Roll out the dough into a thin sheet and cut out round disc shapes for empanadas (use round molds or a small plate, I used a Margarita glass ). See filling instructions.
