Beef with Broccoli and Pickled Peppercorns What? Enough skirt steak for 2 depending on your preferences 1 onion, finely sliced Olive oil 2 cloves garlic, crushed 1tbs balsamic vinegar 1tbs light soy sauce 2tbs flour. 1tsp sugar 1 organic beef stock cube 1 pack tender stem broccoli trimmed and washed 2 tsp pickled peppercorns How? Remove the fat from the beef and slice into 1cm strips and coat in flour. Add a good drizzle of oil to a wok and wait until it is smoking before frying the beef until crisp. Remove the beef using a slotted spoon and allow to rest on a plate. Turn the heat down, add the onion and garlic to the wok and allow to soften. Add the peppercorns, balsamic, soy and sugar and allow to bubble until thickened. Add cornflour if too thin or a splash of water if too sticky. Return the beef and allow to cook for a minute Steam the brocoli to your liking, Drain and serve with the beef Add boiled new potatoes for a more substantial dish
