Beefy Cowboy Beans recipe 1 1/2 pounds ground beef 1 medium onion, chopped 1 red or green bell pepper, cut into 1/2-inch pieces 1 (16 ounce) can baked beans 1 (15 1/2 ounce) can Great Northern beans, rinsed and drained 1/4 cup tomato catsup 1/4 cup Heinz 57 sauce 1 tablespoon packed brown sugar 2 teaspoons Worcestershire sauce In large nonstick skillet, brown ground beef, onion and bell pepper over medium-high heat 6 to 8 minutes or until beef is no longer pink, breaking up into 1-inch crumbles. Pour off drippings. Season beef mixture with 1/2 teaspoon salt and 1/8 teaspoon pepper. Stir in beans, catsup, Heinz 57 Sauce, brown sugar and Worcestershire sauce. Reduce heat to medium-low. Simmer, covered, 10 minutes, stirring occasionally. Cattle Drive Cornbread recipe 4 cups cornmeal 1/2 cup vegetable oil 1 cup all-purpose flour 1 1/2 cups chopped onion 1 to 2 finely chopped jalapeño peppers 2 tablespoons granulated sugar 1 1/2 tablespoons salt 2 teaspoons black pepper 1 (16 ounce) can creamed corn Boil a pan of water. Mix cornmeal and vegetable oil well in a large bowl. Add just enough of the boiling water to form a dough that could be made into a ball. Add remaining ingredients except for the creamed corn. Mix to blend, then add creamed corn. Coat the bottom of a cast iron skillet with vegetable oil. Heat over medium heat. Remove one cup of the cornbread mixture from the bowl, and add it to the skillet. Flatten out the cornbread, and cook as you would a pancake. Cowboy Beans with Cornbread Fritters Cowboy Beans: 1 pound ground beef 1 small onion 1 cup ketchup 2 tablespoons (or less) chili powder 3 cans chili hot beans In a large skillet, brown the ground beef and diced onion. Drain off the excess fat from the beef. Add in the remaining ingredients and mix well. Allow to simmer for 30 minutes. Serve with cornbread fritters. Cornbread Fritters: 1 cup cornmeal 1 cup milk 1 egg Mix ingredients together well and drop tablespoonsful into a skillet of hot oil. Brown on both sides. Cowboy Beans Ingredients 1 pound ground chuck Salt and pepper 1 tablespoon chili powder 1 medium onion, chopped 1 medium bell pepper, chopped 1 gallon ranch-style beans 2 cups brown sugar 1 cup smoked barbecue sauce 1/2 cup chopped canned jalapenos Directions Preheat the oven to 375 degrees F. In a large skillet over medium-high heat, brown the ground chuck and season it with salt, pepper, and chili powder. Remove the meat and drain off all but 1 tablespoon of fat. Cook the onions and bell peppers in the remaining fat until they are soft. Return the meat to the pan and add the beans, brown sugar, barbecue sauce and jalapenos. When everything is combined and the sugar has melted, pour it into a large baking dish and bake for 45 minutes.
