Been going strong on the charters but had to reschedule today, so I had some time this morning to make smoked mullet dip. Todays Smoked mullet dip. (Tomorrows may be different LOL) One medium large mullet. Philadelphia Cream Cheese 8oz. Sour Cream 16oz. Little bit of sweet onion, green onion and celery. Sweet paprika and/or red pepper for garnish. Take one whole smoked mullet, kick back with plenty light, ESPN Sport Center and debone it. Take your time and double check for bones. While doing the deboning, let the cream cheese soften at room temperature. Thatll make mixing the cheese easier with the other ingredients. Finely chop your veggies. Mix your cream cheese, sour cream and onions and celery together. Fold in the smoked fish. Reserve a bit of mullet for garnish. Divide the dip into small containers, garnish (not necessary, but if you prefer) with reserved mullet, red pepper and/or paprika. Refrigerate and let the flavors combine. This is a basic smoked fish recipe and Im always interested in the different styles of dip, so let me hear yours! Looks like Saturday and Sunday will have nice weather, see you out there- Capt. Brian
