Been up since around 3am and down in the store/kitchen putting labels on last nights persimmon work and getting the jars boxed up for markets. Last nights production 139 half pints of T5R Persimmon goodness :) 133 Persimmon Rosehip Jelly and 36 Persimmon Syrup Several folks have asked for a syrup version of the Persimmon Jelly and I have played around with the recipe and believe I have hit the right combination for a very good syrup. Runny enough to pour but sticky enough to hold. I am only making these 36 as a test market product for 2014. If the feedback is positive we will add it to the menu full time in 2015 and produce a lot more. Two additional test market products for 2014....... Persimmon Butter a total change from the Jelly recipe but yet another recipe from the ancient book of recipes. The entire process is quite different and I will be doing 3 versions of it in a very limited amount for the holidays. Persimmon/Mint Butter, Persimmon Clove Butter and Straight Persimmon Butter. These will be available in 4 oz 1/4 pint jars and will be a very limited supply. The second a by product of making the Jelly is persimmon pulp, the ancient book of recipes suggest using this pulp for persimmon bread and persimmon cakes. So I kept 30 pounds of the core pulp and froze it for making breads and cakes. Also test market products that depending on the feedback will get cut in 2015 or see increased production. A recipe I tried and love but unfotunatley cant make available is Persimmon Custard pie. It pretty much looks like a pumpkin pie but taste like persimmon and is beyond great. There may be a day that I can make these wonderful pies available if things keep going well :) One more week of picking and processing persimmons and then persimmon season will be over and I can settle into the winter groove and relax a bit over the cold months. After all that moved forward in 2014 I can use a nice winter vaccation right here on the T5R, well other than taking care of the critters, working the high tunnel and attending the CCFM Winter Market ......... But hey that is a vaccation after working from 5am-9pm 7 days a week from April through October :) Anyone that wants to say I need to work a real job........ well they should come hang with me for a month or a entire summer season ;)
