Before....and After!! Ill call it mexican lasagne! My take on a recipe Tio Primo Vargas posted up that looked really yum! So I tried it! Heres his original link to the recipe: hello-homebody/2013/07/27/chile-rellenos-casserole/ Since Deb doesnt like beef much, I put my own spin on it: Doubled the original recipe, as I was in a 10x13... Mi Pueblos meats department is UNbelievable, and they have a Pollo Preparado al Pastor that is pre-marinated, all cut and diced, and at 2.50 a pound a GREAT add to this, course tacos will be made as your cooking it! so, 3lbs worked out fine (after her and I lunched on 3/4 lb munchin! ) And in addition to the Big can of Ortega chiles I used, I added 6 poblamos and 8 anahiems, roasted up on my tortilla comal, and 4 kinds of cheeses! Monterey, cheddar, Oaxca, and mexican 4 cheese blend... Bottom layer: chiles, next layer: meat, then monterey, then poblamo chiles, then cheddar, then whats left of the meat, then oaxca, then the anahiems, and topped off with the four cheese blends and a sprinkle of this cheese and that cheese! In the 375 degree oven for 45 and Whammo! What a GREAT and EASY crowd pleaser!
